my version of chicken schnitzel:
- ingredients:
2 pieces of breast meat - thin and flat.
Bowl 1: Sieve Flour (all purpose or corn), 1/2 tsp of salt, 1/4 tsp of ground pepper
Bowl 2: 2 large eggs
Bowl 3: fine breadcrumbs & shredded parmesan
2 tbsp of olive oil or margarine
1. Dunk chicken in Bowl 1 then 2 and finally in Bowl 3.
2. Heat up the wok and pour in oil/margarine
3. When the oil is hot, turn down to a medium heat and put in the chicken; Flip it every 2 minutes.
4. When cook, place it in a pre-heated oven to keep warm.
Pasta ingredients:
Fettucinne
Margarine or Oilive Oil
Garlic - bruised not chopped up
Parsley - chopped up.
Olives (keep the juice for flavouring)
Shredded Parmesan.
1. Prepare a pot of water and throw in pasta when boiling.
2. In a separate pan or wok, melt the butter and then throw in the garlic and then parsley. Break up the garlic to let out the flavour and fragrance.
3. When the garlic gets a bit brown, mix in the cook pasta and then the olives last.
4. Add in two spoon of the juice from the can of olives. Stir it around and you are ready to serve.
5.Sprinkle shredded parmesan on pasta when serving.
